Leesburg’s Michele and Cory Fisher thought the Leesburg restaurant scene was missing something. Their new hot salad and bowl restaurant, Lettuce Be LoCo, opened last week, offering quick, easy and healthy options in County Loudoun.
Fisher said she and her husband had a long history in the restaurant business and wanted to marry their passion for the industry with their interest in health. And, with an abundance of local farms, the couple knew they could build a business that was literally rooted in the community.
âEating fresh and local and also bringing something healthy with a good atmosphere was the goal. â¦ It’s just something that feels good, âFisher said.
The duo partnered with chef Rich Rosendale of Leesburg to design the menu. They spent months in Rosendale’s kitchen, experimenting with recipes and tweaking their favorite creations to perfection. Fisher said the secret to a good salad is the dressing. With Rosendale’s advice, Fisher said he came up with some pretty compelling options.
âIt was teamwork, for sure,â Fisher said.
Opening up during the pandemic presented challenges; There were delays in obtaining kitchen equipment, which delayed the opening of the restaurant. Fishermen depend on local farms for produce, so opening later after the first frost of winter meant less food availability. But, Gathering Springs Farm in Middleburg, and a few other farms, have been able to provide enough produce at the end of the harvest season to supply the kitchen for the winter season.
The Fishers opted for a smooth opening last week, giving the team time to fine-tune their operation and continue to train new staff.
âIt was great, but it was locomotive,â Fisher said. âWe got such great feedback from so many people who work there at lunchtime. We have all five star reviews so far which has been very nice. It’s a real success and we are very happy with the way the first week went.
Even only a week after the start of operations, customers already have their favorite dishes. Fisher said the LoCo Cobb salad, avocado seed bowl, and curry cauliflower soup have been a hit. Les PÃªcheurs plan to offer seasonal creations, optimizing the supply of vegetables they select from local farms.
And soon, lovers of salads and diet products will be able to order directly at work or at home. Lettuce Be Loco will soon be an option on the DoorDash app.
Right now, the goal is to make Leesburg Restaurant a staple in the community. Eventually, the fishermen hope to open other locations in Loudoun County.
